Third-generation grasp butcher Thomas Odermatt is the mastermind behind Roli Roti, a cellular connoisseur rotisserie that’s been serving the Bay Space and past since 2002. Thomas’ humble idea is to serve high-quality rotisserie cooked meats like entire rooster and big porchetta, a hand rolled pork tenderloin full of spices and cooked till the pores and skin is crisp. Roli Roti’s meat sandwiches and potatoes cooked with pork and rooster drippings have made him well-known round San Francisco, and Thomas’ ardour and spirit have saved the enterprise going regardless of setbacks (like one meals truck hijacking).
